Introduction

Matcha originated in China during the Sui and Tang dynasties. Later on during the Ming dynasty, it spread to Japan and its tender leave are - collected from the shoots of tea tree in summer - clumped together (called Bing Cha, 饼茶). Before consuming it, these clump of tea leaves need to be heated and dried, before using a natural stone grinder to grind the leaves into a powder. When one drinks matcha, a series of complex tea drinking rules need to be followed most of the times. After all, drinking Matcha is also a process of cultivating one's mind and behaviour. In our present, fast-paced society, there are only a handful of people who adhere to the tea-drinking rules. Matcha is mostly used to prepare various exquisite dishes. Food that are prepared with green matcha appears as a green flower on the dining table. Thus, many people enjoy and vastly pursue it. |
